Being Italian means you use basil, fresh mozzarella, and tomato wherever you can – Including on burgers.

I first make the aioli and place in the refrigerator (this takes about 2 minutes). Next, I prep the roasted red peppers and burgers (about 10 minutes prep). While they are grilling I set up the toppings and do my cleanup, that way everything is seamless and ready to serve!

Ingredients:

The burgers:

  • 2 pounds of ground beef (your choice on fat %)
  • Salt and pepper
  • 2 garlic cloves, grated
  • 1 tablespoon of parmesan cheese

The aioli:

  • 2 tablespoons of mayo
  • 1/2 lemon, juiced
  • 1 clove of garlic, diced finely
  • 1 pinch of sea salt or Kosher salt

The roasted red peppers:

  • 1 whole red pepper, sliced in thick strips
  • 2 tablespoons of olive oil
  • 1 clove of garlic
  • Salt and pepper
  • Foil

The toppings:

  • Italian bread, cut in half and then quarters to create rolls or brioche hamburger rolls
  • Fresh mozzarella, sliced
  • 1 or 2 basil leaves per burger
  • Roma tomatoes or San Marzano tomatoes, sliced

Instructions:

  • Make the aioli by combining the mayo, lemon, garlic and salt in a small condiment bowl and refrigerate.
  • For the roasted red peppers, place the slices on foil and coat with the olive oil, salt, pepper, garlic combo. Grill them while you grill the burgers or broil them in the oven 5 minutes.
  • For the burgers, make the burgers by combining the ingredients in a bowl and forming patties. Grill the burgers to your desired temperature, and place the fresh mozzarella on top 2 minutes before removing from the heat.
  • Serving: Place on the rolls or brioche, top with basil, tomatoes, the roasted red peppers, and the aioli and serve!!!
